THIS IS MY JAM. I LOVE this soup!! I love how easy it is to make. I love how flavorful it is. I love that it makes a big old giant pot so I can eat it for days. I love that is tastes like Mexican chili. Yeah…it just doesn’t get any better than this!!

7 Can Chicken Taco Soup

This soup is one of my all-time favorite meals. It's simple, it's EASY, and the flavors are on point.

Ingredients

  • 1 can (15-ounce) black beans, drained and rinsed
  • 1 can (15-ounce) pinto beans, drained and rinsed
  • 1 can (14.5-ounce) petite diced tomatoes
  • 1 can (15-ounce) sweet corn, drained
  • 1 can (12.5-ounce) chicken breast, drained & flaked
  • 1 large can (28-ounce) green enchilada sauce
  • 1 can (14-ounce) chicken broth
  • 1 packet taco seasoning
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Shredded cheese (optional)
  • Tortilla chips (optional)
  • Sour cream (optional)
  • Avocado slices (optional)
  • Lime wedges (optional)

Instructions

  1. Combine all the ingredients into a large pot and bring to a boil over medium-high heat.
  2. Lower the heat and let simmer for 20 to 25 minutes. Serve warm with desired optional ingredients.

Notes

I no longer add avocado. While I LOVE avocados, they’re expensive and temperamental in terms of when they are/aren’t ripe, and to be honest, there is so much flavor in this dish, the avocados get overpowered. The lime wedges, sour cream and tortillas are a MUST, in my opinion.

Ham & Bean Soup

This is the 2nd of my 3 part series called…What The Hell To Do With A Spiral Ham! (See Notes below.) This soup is AMAZING and packed full of goodness. DO NOT UNDERCOOK THE BEANS since these are raw beans or they will wreak havoc on your tummy.

Ingredients

  • 1 pkg Hurst's HamBeens 15 bean soup
  • 8 cups low sodium chicken broth (can sub water, beef or veg broth)
  • 1 leftover ham bone with meat (or ham hocks, diced ham or 1 lb. cooked sausage)
  • 1 15-ounce can diced tomatoes
  • 1 onion, diced
  • 1 clove garlic, minced
  • 1 tsp chili powder
  • 1 lemon, juiced
  • Optional: hot sauce or crushed red pepper, to taste

Instructions

  1. Rinse beans and drain. Sort any unwanted debris and set seasoning packet aside.
  2. Place beans, onions, ham bone, broth, garlic and chili powder in a 6 quart slow cooker.
  3. Cook on low for 8 hours or until beans are tender.DO NOT UNDERCOOK THE BEANS.
  4. Once tender, remove the ham bone (if used) and chop any meat left on the bone; add it back to the pot.
  5. Stir in diced tomatoes, Hambeen flavor packet, and lemon juice.
  6. Cook for an additional 30 minutes.

Notes

I bought a spiral ham from Costco and made the Brown-sugar crockpot ham or Ham & Cheese sliders, then use the leftover hambone and large piece of unsliced ham for this recipe.  It's PERFECT.

One of our favorite soups in the wintertime.

Ingredients

  • 1 tablespoon olive oil
  • 1 lb. spicy Italian sausage, casing removed
  • 3 cloves garlic, minced
  • 1 onion, diced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon crushed red pepper flakes, optional
  • Kosher salt and freshly ground black pepper, to taste
  • 5 cups chicken broth
  • 1 bay leaf
  • 1 pound red potatoes, diced
  • 3 cups baby spinach
  • 1/4 cup heavy cream

Instructions

  1. Heat olive oil in a large stockpot or Dutch oven over medium heat. Add Italian sausage and cook until browned, about 3-5 minutes, making sure to crumble the sausage as it cooks; drain excess fat.
  2. Stir in garlic, onion, oregano, basil and red pepper flakes. Cook, stirring frequently, until onions have become translucent, about 2-3 minutes. Season with salt and pepper to taste.
  3. Stir in chicken broth and bay leaf, and bring to a boil. Add potatoes and cook until tender, about 10 minutes.
  4. Stir in spinach until it begins to wilt, about 1-2 minutes. Stir in heavy cream until heated through, about 1 minute; season with salt and pepper, to taste.
  5. Serve immediately.

Ingredients

  • 1 pound ground turkey
  • 1 28-ounce can diced or crushed tomatoes
  • 1 can kidney beans
  • 1 can black beans
  • 1/2-1 onion, chopped
  • 2 tablespoons chili powder
  • 1 tablespoon fresh minced garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon oregano
  • 1/2 teaspoon cumin
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon paprika
  • 2 cups water
  • 2 cups cooked brown rice (optional)
  • 1/2 avocado, sliced (optional)

Instructions

  1. Cook rice according to package instructions.
  2. In large 2 quart covered pot, brown ground meat, drain & return to pot.
  3. Add all remaining ingredients, heat through and serve it up! Serve it over cooked brown rice and top with avocado slices if desired.
