Brazilian Cheese Bread

Holyyyy shit have you ever had these at a Brazilian Steakhouse? They’re so good that you KNOW they’re just trying to fill you up on these so you don’t eat all their meat and you STILL can’t help yourself from not only eating all of them but from asking for seconds. Their crispy and chewy and cheesy and heavenly.

Brazilian Cheese Bread

Crispy chewy cheese bread balls.

Ingredients

  • 1 egg, at room temperature
  • 1/3 cup olive oil
  • 2/3 cup milk
  • Scant 1 1/2 cups tapioca flour
  • 1/2 cup packed grated cheese (cheddar & mozzarella)
  • 1 heaping teaspoon salt

Instructions

  1. Preheat oven to 400°F. Grease a mini muffin tin generously. Put all of the ingredients into a blender and pulse until smooth. Use a spatula to scrape down the sides of the blender so that everything gets blended well. It will yield about 2 cups of batter.
  2. Transfer the batter into the mini muffin tins. Fill up about 3/4 full. Bake in the oven for 20 minutes, until all puffy and just lightly browned.
  3. Remove from the oven and let cool on a rack for a few minutes. Eat while warm or save to reheat later.

Notes

Do not overcook these! Also, eat them the same day you make them. They’re not so good the next day.
