Blueberry Buckle

Almost like a blueberry french toast bake.

Ingredients

For the Buckle
  • 2 cups sugar
  • 1/2 cup butter, softened
  • 2 eggs
  • 1 cup milk
  • 2 cups flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 3 cups fresh blueberries
For the Topping
  • 1 1/2 cups sugar
  • 1 cup flour
  • 2 teaspoons cinnamon
  • 3/4 cup butter, softened

Instructions

  1. Cream sugar, butter and eggs together.
  2. Add milk.
  3. Combine dry ingredients in a separate bowl, and then add to batter.
  4. Fold in blueberries.
  5. Pour batter into a buttered 9x13” pan.
  6. Mix together crumb ingredients. Sprinkle crumb topping onto batter.
  7. Bake at 350°F for 55 to 60 minutes.

Notes

I prefer my Buckle with an open heart and no judgement, but that’s just me!
