JELL-O Pistachio Nut Swirl Cake

One of the few items from the side of a box that has stayed in my cookbook rotation. This cake is what people mean when they want pistachio. The flavor, the color…don’t get it twisted. It’s this.

JELL-O Pistachio Nut Swirl Cake

A nostalgic favorite, right off the JELL-O Pistachio Pudding Mix box.

Ingredients

  • 1/4 cup sugar
  • 1/2 cup finely chopped nuts
  • 1 teaspoon cinnamon
  • 1 package yellow cake mix
  • 1 small package JELL-O Pistachio Flavor Instant Pudding
  • 4 eggs
  • 1/2 cup sour cream
  • 1/4 cup oil
  • 1/2 teaspoon almond extract
  • 7 drops green food coloring

Instructions

  1. Combine sugar, nuts and cinnamon; set aside.
  2. Combine remaining ingredients in a large mixer bowl. Blend, then beat at medium speed with electric mixer for 4 minutes.
  3. Pour 1/3 of the batter into a greased and floured 10-inch Bundt pan. Sprinkle with half the sugar mixture. Repeat layers and top with remaining batter.
  4. Bake at 350°F for 45-50 minutes or until cake tester inserted into center comes out clean. Do not under bake. Cool in pan about 15 minutes. Remove and finish cooling on rack.

Notes

*In high altitude areas, add 2/3 cups flour and 2/3 cups water, reduce oil to 2 tablespoons, and bake at 375°F for 50-55 minutes.
