Zucchini Bread
This is my great-grandma’s recipe. I just remember thinking this was so delicious, having no idea what the hell zucchini was.

Zucchini Bread
A moist, sweet bread.

Ingredients
- 3 cups flour
- 1 1/2 cups sugar
- 2 cups zucchini, peeled and shredded
- 1 cup chopped nuts
- 1 cup raisins
- 3 eggs
- 1 cup oil
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 1 teaspoon baking powder
- 3/4 teaspoon baking soda
Instructions
- In a large bowl, stir together flour, sugar, cinnamon, salt, baking powder, baking soda, zucchini, nuts and raisins.
- In another bowl, beat together the eggs and oil.
- Pour oil mixture over flour mixture and stir until moistened.
- Turn into greased 9x5x3” loaf pan.
- Bake at 350°F for 1 hour and 30 minutes, or until toothpick inserted in center comes out clean.
- Cool in pan for 10 minutes, then invert on rack, turn top-side up and cool completely.
