Zucchini Bread

This is my great-grandma’s recipe. I just remember thinking this was so delicious, having no idea what the hell zucchini was.

Zucchini Bread

A moist, sweet bread.

Ingredients

  • 3 cups flour
  • 1 1/2 cups sugar
  • 2 cups zucchini, peeled and shredded
  • 1 cup chopped nuts
  • 1 cup raisins
  • 3 eggs
  • 1 cup oil
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda

Instructions

  1. In a large bowl, stir together flour, sugar, cinnamon, salt, baking powder, baking soda, zucchini, nuts and raisins.
  2. In another bowl, beat together the eggs and oil.
  3. Pour oil mixture over flour mixture and stir until moistened.
  4. Turn into greased 9x5x3” loaf pan.
  5. Bake at 350°F for 1 hour and 30 minutes, or until toothpick inserted in center comes out clean.
  6. Cool in pan for 10 minutes, then invert on rack, turn top-side up and cool completely.
