Barbara’s Pecan Pie Muffins
Barbara and I started together at Humana. She was a sweet, funny, older woman who brought these muffins to a potluck for our training class and I was hooked. These muffins are the perfect way to enjoy pecan pie without all the hassle. Barbara passed away a year or so later, but her muffins live on. RIP Barbara.

Barbara's Pecan Pie Muffins

Ingredients
- 2 jumbo eggs
- 1 cup packed dark brown sugar
- 1/2 cup flour
- 1/2 cup melted butter
- 1 cup pecans, broken into large pieces
Instructions
- Heat oven to 350°F. Fill 12 muffin tins with paper, and spray papers with non-stick spray.
- Whisk eggs until foamy.
- Stir in sugar, flour and butter. Add nuts.
- Spoon into muffin cups. Bake 20 - 25 minutes. The top will puff a little and form a chewy pecan-pie-like layer.
