Ice Cream Sandwich Cake
I went to visit Sabrina at Tusculum College and she asked me to go to eat at the church with her. I was like…what. Turns out there was a church across the street that served dinner, EVERY Thursday, to ANY kids who wanted to come. They would discuss a bible verse and then eat a big, delicious buffet-style meal but with homecooked food. Mama J was the preacher’s wife and the creator of these wonderful meals. One of my favorite things she served was this Ice Cream Sandwich Cake. I’m not a huge fan of ice cream. Not a fan of ice cream cakes. But this shit is different. So so good.

Ice Cream Sandwich Cake
The only ice cream dessert worth eating IMO :)

Ingredients
- 18-24 vanilla ice cream sandwiches
- 2 jars chocolate fudge
- 3 candy bars, chopped up for topping
- 1 16-ounce tub Cool Whip Lite
Instructions
- Line 9x13” pan with ice cream sandwiches.
- Top with 1/2 jar of chocolate fudge.
- Spread out layer of 1/2 tub of Cool Whip.
- Add 2nd layer of ice cream sandwiches.
- Top with the rest of the fudge.
- Spread out the rest of the Cool Whip.
- Top with crunchy candy pieces. Freeze for an hour to set.
Notes
I use Butterfingers or Snickers, but any crunchy candy will work! Depending on the candy, you may want to substitute a jar of caramel for the chocolate fudge.
