Gama’s Carrot Cake
What is my favorite cake? I will always say Banana Cake with Peanut Butter frosting. Because it’s unusual, so having it is a special treat. But in reality, there is a tie between that cake and this carrot cake. The only bad thing about this cake is that is so fucking good that all other carrot cakes are sub-par because this cake set the bar. It’s moist. It has all the goodies in it. And the icing is pure PERFECTION. I dare you to disagree.

Gama's Carrot Cake
The BEST carrot cake filled with all the goodies.

Ingredients
- 1 1/2 cups vegetable oil
- 1 1/2 cup sugar
- 4 eggs, well beaten
- 3 cups grated carrots (just less than 1 lb.)
- 2 cups flour
- 1/2 teaspoon salt
- 2 1/2 teaspoon baking soda
- 2 teaspoon ground cinnamon
- 2 teaspoon ground allspice
- 1 cup chopped pecans
- 1 cup raisins
- 1 teaspoon vanilla extract
Instructions
- Cream oil & sugar. Add eggs & carrots and mix well.
- Mix dry ingredients together.
- Add flour mixture to carrot mixture a small amount at a time, beating well.
- When blended, add pecans, raisins and vanilla.
- Pour into 3 greased and floured layer pans and bake at 350° for 25-35 minutes.
- Frost/ice with Gama’s Cream Cheese Icing.
