Artichoke Dip
Artichoke dip is one of those comfort foods that isn’t generally what I want to be eating, but when I’m cold and maybe a little overwhelmed with work…I just need something that requires very little thought or effort and will make me feel warm and comfortable. Yeah…that’s artichoke dip.

Artichoke Dip
The classic version.

Ingredients
- 2 cans of artichoke hearts in water
- 1 small can diced green chilies
- 18-ounce package shredded Monterrey Jack Cheese
- 2 large spoonful's of mayonnaise (not Miracle Whip)
- 1 teaspoon garlic powder or paste
- Parmesan cheese, to taste
Instructions
- Drain artichoke hearts and chop as fine as desired.
- Combine artichokes, chilies, cheese, mayo and garlic.
- Spread mixture evenly into baking dish. Sprinkle Parmesan cheese until covered, then mix again.
- Bake at 350°F for 20 minutes OR microwave for 15 minutes. Serve hot or cold.
