Southwestern Cheeseburgers
I’m not a huge fan of cheeseburgers because I feel like they’re just another version of salad…they really just taste like whatever you put on them. That being said, these cheeseburgers have a little flare and a lot of flavor!

Ingredients
- 1 1/8 pounds ground beef
- 4 sesame seed buns
- 4 ounces Monterey Jack cheese, sliced
- 1/4 red onion, small diced
- 1 avocado, diced
- 1 lime, quartered
- 1 large bunch cilantro
- 2 tablespoons Mexican Spice Blend
Instructions
For the Guacamole
- In medium bowl, combine avocado, onion and the juice of 3 lime wedges. Drizzle with olive oil. Mash together with a fork. Add salt and pepper to taste.
For the Burgers
- In a medium bowl, combine the ground beef and spice blend. Season with salt and pepper. Mix together with hands and then form four 1/2" thick patties.
- In a large nonstick pan, heat 1 tablespoon olive oil on medium-high until hot. Add the patties. Cook 2 to 4 minutes on the first side, or until browned. Flip and top with cheese. Cook another 2 to 4 minutes, until desired doneness. Transfer to a plate and cover loosely with foil, leaving any browned bits in the pan.
- Add the buns to the pan, cut sides down. Add 1 teaspoon of olive oil if the pan seems too dry. Toast on medium-high 1 to 2 minutes, or until golden brown.
- Top the bun bottoms with the cooked patties, guacamole and cilantro.
