Diamond Burgers

I have no idea why these are called Diamon Burgers. They really should be called Bite-Your-Face-Off Burgers…because they have quite a kick to them! These tend to get pretty messy, so make sure you drain the Ro-tel tomatoes and the meat WELL.

These suckers are spicy and get a little soggy on the bottom, so make sure you completely drain the Ro-tel.

Ingredients

For the Burgers
  • 1 pound lean ground beef
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon cumin
  • 1 teaspoon mustard powder
  • 1/2 teaspoon smoked paprika
  • 2 cups diced onion (about 1 whole onion)
  • 3-4 cloves garlic, minced
  • 1 10-ounce can Ro-tel Decide Tomatoes and Green Chilies, drained
  • 6 slices cheddar cheese
  • 12 dinner rolls
For the Glaze
  • 1/2 cup butter
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon mustard
  • 1 tablespoon sesame seeds

Instructions

  1. Preheat oven to 350°F. Coat 9x13” baking dish with non-stick cooking spray.
  2. Place a large skillet on the stovetop over high heat. When the pan is very hot, add the beef and season with salt, pepper, cumin, mustard powder and paprika.
  3. Add the onion and garlic, and cook, stirring occasionally, until the beef is browned and onions are golden.
  4. Stir in drained tomatoes until well combined.
  5. Place bottom half of buns in prepared pan. Top with beef mixture.
  6. Break cheese slices into quarters and top meat with 2 quarters of cheese.
  7. Replace top half of buns.
  8. Melt the butter in a microwaveable dish. Add the rest of the glaze ingredients and stir to combine. Pour over the tops of the buns.
  9. Bake for 25 minutes until buns are lightly browned.

Notes

I use Hawaiian rolls and they’re delicious!
