Shrimp Scampi & Fresh Linguine

Ingredients

  • 1 1/2 pounds shrimp, shelled and deveined
  • 1 pound fresh linguine pasta
  • 6 cloves garlic, minced
  • Juice of 2 lemons
  • 1 lb. broccoli
  • 5 tablespoons butter
  • 1/3 cup grated Parmesan Cheese
  • 3/4 cup pasta cooking water, reserved
  • Salt and pepper, to taste

Instructions

  1. Cook pasta according to directions.
  2. While pasta cooks, pat shrimp dry and season with salt and pepper.
  3. In a large pot, melt 3 tablespoons butter on medium-high until hot.
  4. Add the garlic and broccoli; season with salt and pepper. Cook, stirring occasionally, 3 to 5 minutes, or until softened and fragrant.
  5. Add the seasoned shrimp. Cook, stirring occasionally, 2 to 4 minutes, or until the shrimp are opaque and cooked through.
  6. When the pasta is cooked to desired consistency, drain pasta, reserving 3/4 cup of the cooking liquid. Add cooked pasta to the broccoli and shrimp.
  7. Add remaining butter, lemon juice and 1/2 cup of the reserved liquid. Season with salt and pepper. Cook, stirring frequently, 1 to 2 minutes, or until well combined.
  8. If the pasta seems dry, add more of the reserved liquid. Season with salt and pepper, to taste.
