Lime Chipotle Shrimp with Brown Rice
I started eating this dish when I went all in on Arbonne and did the 30 Day Health Challenge. This recipe taught me the benefits of making just that one switch from white rice to brown rice since brown rice will not affect your blood sugar. Try it. This dish is super simple and super healthy.

Lime Chipotle Shrimp with Brown Rice
A simple, healthy meal.

Ingredients
- 12 jumbo shrimp, peeled
- Juice from 1 lime
- 1/2 teaspoon ground red chipotle pepper
- 2 cloves garlic, minced
- 1/2 teaspoon sea salt
- Brown rice, cooked according to package directions
Instructions
- Combine all ingredients in a zip-lock baggie and marinate for at least 20 min.
- Heat skillet and add all ingredients, including the marinade, to the pan. Cook a few minutes on each side until the shrimp turn pink. OR, put marinated shrimp on a skewer and cook on a grill.
- Brush marinade over shrimp as they cook. Cook a few minutes on each side until they turn pink.
- Serve over cooked brown rice.
