Honey-Garlic Cod and Coconut Rice

This is the only fish dish, other than the Pistachio-crusted Halibut, that I eat, besides salmon. Also, cod isn’t really a fish. You know that, right? Like…you can’t have a pet cod. It just sort of means ‘white fish’. Anyway…the meld of flavors with the honey, garlic, cashews and coconut…wow. A little bit Asian, a lot delicious.

Honey-Garlic Cod and Coconut Rice

Ingredients

  • 4 Cod Fillets
  • 1 cup Brown Rice
  • 1 3/4 cups Coconut Milk
  • 4 cloves Garlic, finely chopped
  • 3 tablespoons Cashews, roughly chopped
  • 2 tablespoons Honey
  • 1 tablespoon butter
  • 1/4 cup Soy Sauce
  • 1/2 cup water

Instructions

  1. In a medium pot, combine the rice, coconut milk, big pinch of salt and water. Bring to a boil, then cover and reduce heat to low. Simmer 25 to 30 minutes.
  2. Pat the cod fillets dry with paper towels; season with salt and pepper on both sides.
  3. In a large pan, heat 2 teaspoons of olive oil on medium-high until hot. Add the seasoned fillets; cook 3 to 4 minutes on the first side, or until lightly browned. Flip the fillets and add the garlic; cook, stirring frequently, 30 seconds to 1 minute, or until fragrant.
  4. Add the honey, butter and soy sauce. Cook, occasionally spooning the sauce over the fillets, 3 to 4 minutes or until the cod is cooked through and the sauce has thickened.
  5. Remove from heat and season with salt and pepper to taste.
  6. Serve with coconut rice. Garnish with cashews and green tops of scallions.
