Mississippi Pot Roast

Sooo…I LOVE Mississippi Pot Roast. It’s literally one of my favorite dishes to make. I always serve it on top of mashed potatoes. The flavor the pepperoncini brings to this meal is incredible. And it just can’t get easier than throwing some shit in a crockpot! This is the standard recipe for Mississippi Pot Roast that I’ve been making for years. I will probably decide on one version and delete the other but I have to figure out which one I prefer first.

Mississippi Pot Roast

The standard version of this tangy, tender roast.
Prep time: 5 MinCook time: 7 HourTotal time: 7 H & 5 M

Ingredients

  • 1 3-4 pound chuck roast
  • 1/2 cup butter (1 stick)
  • 1 packet ranch dressing mix, dry
  • 1 packet onion soup mix, dry
  • 10-12 pepperoncini peppers
  • Olive oil
  • Salt & Pepper

Instructions

  1. Heat olive oil in skillet and brown the chuck roast on all sides…about 4 minutes per side.
  2. Add the roast to the crockpot. Top with ranch packet, then onion soup packet. Top with stick of butter.
  3. Add peppers to the top and sides of the roast.
  4. Cook 7- 7/12 hours on low.

Notes

I have also made this multiple times without searing…just putting that bad boy straight into the crockpot. It’s really just personal preference.
