Filley Meatloaf
I was a picky eater when I was little. Or so I’ve been told. I’m starting to think maybe my mom’s cooking was just lacking…like…seasoning? use of an oven? I’m kidding…but she did love the microwave! Anyway, meatloaf was one of those meals that I dreaded. It just seemed boring and dry and like…a loaf of meat. Ew. Then my friend Sherry invited us over and fixed meatloaf and so I HAD to eat it and pretend to like it. Only I didn’t have to pretend. It’s the opposite of dry and the sauce is everything.

Filley Meatloaf
The only meatloaf I've ever had that is MOIST.

Ingredients
For the meatloaf
- 2 eggs
- 1 1/2 cups breadcrumbs
- 1/2 cup ketchup
- 1 1/2 pounds ground hamburger
- 1 package Lipton onion soup mix
For the sauce
- 1 can tomato soup
- 1 teaspoon Worcestershire sauce
- 1/2 cup brown sugar
- Water (use 1 soup can full)
Instructions
- Combine all the meatloaf ingredients. Mix well and form into a loaf pan or casserole dish. Bake for 45 minutes at 350°F.
- While the meatloaf is cooking, combine all sauce ingredients and whisk until sugar is dissolved. Pour the sauce over the meatloaf and cook an additional 20 minutes.
